The die fits directly into the above-mentioned Pasta Machines WHY BRASS - Brass dies were the traditional type of pasta manufacture. The "al bronzo" made noodles are rarely found and usually only in selected delicatesseries. By pressing the pasta dough through the brass matrices, the surface of the pasta is roughened at the same time, the pasta becomes more grippy. This allows the pasta to better absorb the sauce, aromas and spices later. Matrices with Teflon inserts give the pasta a smooth surface and accelerate the extrusion of the pasta. The following cleaning options for dies with Teflon inserts are recommended: Water storage: put the dies in water after use and store in the refrigerator. The water should be changed daily. Over time, the dough is washed out. If the mould is discolourated – a purely optical effect – you can counteract with a treatment with citric acid. Freezing: The mould is placed in the freezer immediately after use – including dough residues. Soak in cold water for a few hours before the next use, so that the dough thaws and becomes soft again. If you then insert the die back into the machine, the old dough residue comes out from the last time - please dispose of this rest. Important: Teflon dies must never be placed in very hot or even boiling water. The heat would deform the Teflon - the insert would then be unusable. Please do not clean sharp cleaning tools such as cleaning tools for our brass/bronze matrices.
